Healthy Fudge!

We’re not big on sweets, but we know there are lots of vegetarians out there who seek out healthy alternatives in the dessert category.  And we don’t blame them for wanting to reward themselves for maintaining such a healthy diet!

I was never a fan of fudge  for the most part, but after a family friend shared a decadent batch of it with me, I couldn’t get enough of it.  She claimed it didn’t contain an ounce of sugar OR chocolate and my boyfriend insisted I get the recipe to make it for ourselves.

Looking at other recipes for the gooey treat, I noticed it’s largely composed of butter, tons of sugar and massive amounts of chocolate chips.  Our version uses ghee (clarified butter), organic peanut butter, honey and best of all carob powder, which tastes similar to chocolate but actually stems from a pea pod and is part of the legume family.  Instead of harboring caffeine and sugar like chocolate, carob is full of anti-oxidants and contains enzymes that aid digestion and increase energy.  You won’t feel guilty eating this fudge!

1 cup raw honey

1/2 cup ghee, softened NOT melted

1/2 cup raw carob powder

1/2 cup organic creamy peanut butter

1 tsp pure vanilla extract

1/2 tsp sea salt

1 tsp coconut oil

  • Coat the bottom of an 8 X 8 baking or glass pan with the coconut oil
  • Simply stir together all the other ingredients VERY WELL, pour into pan and freeze for at least an hour before eating!
