Banana Walnut French Toast

4 slices organic whole wheat bread

3 eggs, beaten

2 tbsp coconut or almond milk

2 bananas, mashed

1/2 cup raw walnuts, chopped

1 tsp cinnamon

1 tsp pure vanilla

2 tbsp organic butter

  • Mix eggs, coconut milk, cinnamon in a bowl
  • In a frying pan over medium heat, melt 1 tbsp butter
  • In another bowl, mix bananas with walnuts
  • When butter is melted, dredge 2 slices of bred through the egg mixture and place on pan.  Cook on each side for about 3 minutes or until egg mix is cooked
  • Then, add half the banana mix on top of one slice of bread and layer the other slice on top.  Cook again on each side for another minute then remove from heat and serve
  • Add another tbsp of butter and repeat instructions with remaining ingredients
