Vegan Peanut Butter Cookies

2 cups spelt flour

1 cup organic peanut butter

1/4 cup maple syrup

1/4 cup raw honey

1/3 cup coconut oil

1/4 cup vegan chocolate chips (optional)

1 1/2 tsp pure vanilla

3/4 tsp sea salt

1 tsp baking soda

  • Preheat oven to 350 degrees
  • Mix flour, salt and baking soda in a bowl
  • In another bowl, mix together peanut butter, maple syrup, honey, coconut oil and vanilla
  • Slowly, stir in dry ingredients, 1 cup at a time until well mixed
  • Place on cookie sheets and cook for no more than 11 minutes
