Chickpea Quinoa Salad with Honey Mustard Dressing



2 cups cooked quinoa

1 1/2 cups cooked chickpeas

1 cup carrots, diced

1 cup fresh baby spinach, chopped

1/2 green onion, chopped

1/2 cup radish, diced

1/4 cup celery, diced

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped


2 tbsp Dijon Mustard

2 tbsp extra virgin olive oil

1 tbsp honey

1 tbsp lemon juice

1/2 tsp sea salt

1/4 tsp black pepper

  • Toss chickpeas, quinoa and vegetables together in a large bowl and stir
  • In a smaller bowl whisk together all ingredients for dressing
  • Pour dressing into salad and mix well
