Peanut Butter Cookies

I made this for a Halloween party over the weekend.  Hardly any of our friends are super healthy eaters, so I didn’t want to freak them out with some vegan recipe or cookies that didn’t have any sweetness to them. These came out great, but still taste somewhat healthy.  Win win for everyone! (And who ever decided that peanut butter cookies should have criss crosses on them-genius!)

1 cup unbleached white flour

3/4 cup whole wheat flour

1 1/4 cups brown sugar

1 cup creamy peanut butter

1/4 cup butter, softened

1 egg

3 tbsp coconut milk

1 tsp pure vanilla

1/2 tsp baking soda

1/2 tsp sea salt

  • Preheat oven to 375 degrees
  • Combine flours, salt and baking soda in a large bowl and mix
  • In a separate bowl stir together peanut butter, butter, brown sugar, egg, coconut milk and vanilla until creamy
  • Slowly add in dry ingredients, 1/2 cup at a time until fully mixed
  • Roll into small balls, drop onto cookie sheer, then press with a fork (criss cross)
  • Bake at 375 degrees for 8 minutes

  2. Thanks for the comment, Van! We actually started off as just a vegetarian blog and didn’t go through and edit all of our earlier recipes to make them vegan. So I would go ahead and just use a flaxseed egg or an egg replacement for this one if you haven’t already! 🙂
