Slow Cooker Lentil Sweet Potato Chili

4 cups vegetable broth

3 cups cubed sweet potatoes

2 cups chopped tomatoes

2 cups chopped yellow onion

1 1/2 cups black beans

1 1/4 cups dry green lentils

1 cup chopped celery

3 cloves garlic, minced

2 tbsp olive oil

1 tsp sea salt

1/2 tsp black pepper

1/4 tsp cayenne powder

1/4 tsp coriander

  • Pour all ingredients into a slow cooker and cook on low for 6-7 hours

  2. We also use dried ones that had been soaked already, but canned will work just the same!

  3. I googled for this recipe on Friday and made it yesterday. It was WONDERFUL. I’m not sure if it was just because my crockpot cooks quickly, but it was ready in 4.5 hours! We also topped it with avocado and ate it with chips. T’was yummy! 🙂
