Creamy Cauliflower, Barley & Spinach Pilaf

1 head cauliflower, chopped

3 cups vegetable broth

1 ½ cups barley

2 ½ cups fresh spinach, chopped

1 ½ cups “cheese” sauce

½ cup onion, chopped

5 cloves garlic, minced

3 tbsp olive oil, divided

1 tsp sea salt, divided

¼ tsp black pepper

  • Preheat oven to 400 degrees
  • In a saucepan, bring barley, vegetable broth and ½ tsp sea salt, to a boil
  • Reduce to a simmer, cover, and cook on low heat for 20 minutes, stirring occasionally
  • Meanwhile, toss cauliflower, onions, garlic, 2 tbsp oil, ½ tsp sea salt and black pepper together
  • Lay on a baking sheet and roast at 400 degrees for 40 minutes, turning half way through
  • Once cooked, stir cauliflower and spinach into barley mix
  • Pour 1 tbsp olive oil and the “cheese” sauce over the mixture and serve
