Buckwheat Vanilla Porridge

I can’t take any credit for this one, but it was too delicious, too easy, too raw and too inexpensive not to at least share with all of you. I’m finding such simple, tasty recipes on Oh She Glows all the time, and this buckwheat porridge recipe really piqued my interest. It resembled our Buckwheat & Brown Rice Porridge, except we figured we’d like it even BETTER since this version is raw. Jim makes a similar porridge with just soaked chia seeds, but to me the texture’s a bit off. This is an excellent morning dish and it makes a massive amount, but costs next to nothing!

2 cups raw buckwheat groats, soaked overnight

1 1/2 cups vanilla almond milk (or regular if you want, the vanilla gives it more flavor)

1/4 cups pure honey

3 tbsp chia seeds

1 tbsp pure vanilla

1 tsp cinnamon

1/4 tsp nutmeg

TOPPINGS

Fresh fruit

Shredded coconut

Vegan chocolate chips

Chopped almonds or pecans

Wheat germ

Raisins

  • Drain buckwheat groats, then place all ingredients in a blender and blend until creamy. Serve with desired toppings!
