Chocolate Vanilla Avocado Pie

Amazing!

I can’t wait to fool everyone tomorrow during Thanksgiving dessert with this faux chocolate pie. I can already see the look on my junk food-addicted brother’s faces when I tell them the delicious pie they’re eating is actually full of avocados. This dessert is rich, creamy and subtly sweet. I am trying REALLY hard not to eat it all tonight. I’ll likely have to hide it from Jim!

1 homemade graham cracker crust, cooked

1 package organic vanilla pudding mix, prepared (we used Organix and subbed the regular milk with coconut milk)

Meat of 2 avocados

1/3 cup raw cacao powder

1/2 cup vegan chocolate chips

1/2 cup coconut milk

1/2 cup raw honey

1 tsp pure vanilla

  • Press graham cracker crust into pie tin
  • Pour vanilla pudding into crust
  • Blend avocados, cacao powder, coconut milk, honey and vanilla in a blender until smooth and creamy
  • Layer “chocolate” pudding ontop of vanilla pudding and then top with chocolate chips
  • Refrigerate for at least 2 hours
