Pumpkin Pie Waffles

These might be the greatest breakfast we’ve ever made-too bad I can’t totally remember how I made them.

I whipped these up at Jim’s parents house a few weeks ago and because I couldn’t find a measuring cup in their kitchen, I eyeballed everything and aren’t exactly sure how much of each ingredient went into these. What I do know is that I couldn’t get enough of them. It was like eating dessert for breakfast-just slightly healthier 🙂

2 cups organic all-purpose flour

1 1/2 cups almond milk

1 1/4 cups pureed pumpkin

1/3 cup brown sugar

1/4 cup maple syrup

2 tbsp tapioca starch

1 tbsp cinnamon

1 tsp baking powder

1/2 tsp nutmeg

  • Whisk all ingredients together
  • Pour into heated waffle maker-everyone’s is different but ours cooked for about 3 minutes
