Raspberry & Apple Coconut Kale Smoothie

Such a big name for such a simple breakfast smoothie!

I really feel as though all the ingredients are essential in making this particular smoothie, though and thus, they all need some credit in the headline. Sometimes omitting a fruit or adding a veggie doesn’t make a huge difference, but in this case, the apple, raspberries, coconut and kale ALL come together perfectly to make this beautiful beverage baby. So don’t discriminate and leave one of them out!

Having the apples and raspberries is a plus, but not necessary. Frozen bananas might be good too, but too much frozen fruit makes for a smoothie slush. And generally brainfreeze. Proceed with caution.

1 1/2 cups frozen raspberries

1 cup frozen chopped apples (left the skins on, too)

1 1/2 cups chopped kale

1 cup coconut milk or water

2 tbsp shredded coconut

  • Blend all ingredients together until smooth-top with additional shredded coconut for garnish
