Super Green Kiwi Cucumber Melon Smoothie

I adore this smoothie. And for once, Jim actually wasn’t a huge fan.

For someone who eats like a starving child (for example, he ate 2 veggie burgers, half a tomato tart, popcorn and a huge portion of red lentil dal for dinner the other night), he is super particular about his smoothies. If he’s not juicing, he wants a very basic smoothie-spinach, bananas, strawberries and mango or pineapple and that’s it. Nothing more, nothing less, for the most part. So he is not generally up for taste testing when I want to make a new, creative morning blend.

I think the color of this smoothie is fantastic and just having that bright green color makes it seem that much healthier. It reminds me of green juice, but it just tastes so much better 🙂 Not that I’m knocking green juice-I love it, it’s just hard to chug down every morning. It would actually be brilliant to juice all of these ingredients together too, if you’re looking to omit the fiber of the smoothie.

1 cup chopped honeydew melon

1 1/2 cups baby spinach

2 kiwis

Half of a large cucumber, peeled and chopped

1- 1 1/2 cups water

  • Blend everything up, adding more water depending on desired consistency

  2. I’ve been slacking…I’ve had more of a pinkinsh, purpley sweet berry smoothie going on most of the summer and I needed more green!
