Sweet Potato Kale Saute

Oh hey, healthy food! Where ya been?

Upon parting ways with Jim, I’ve also parted ways with eating and 10 lbs I didn’t need to lose. I’ve literally been running on beer and french fries for the past two weeks in the midst of all the chaos of moving and my cooking classes and food demos. Nothing wrong with being busy and partying more than usual…except that I haven’t had a real vegetable in…well….too long.

My appetite is finally returning as I start packing up my stuff and feel like I’m really moving on. I still don’t have the luxury of time (and probably won’t again until January) so easy meals are still best. And this one is SO easy! And full of kale and beans and my fave, sweet potatoes. It took just a few minutes to throw together and is really cheap to make, too. My kind of meal 🙂

1/2 bunch curly kale, torn into pieces

1 1/2 cups black and/or kidney beans

2 1/2-3 cups chopped sweet potatoes, peeled

1 cup organic frozen corn

2 tbsp olive oil

2 tsp cumin

1 clove garlic, minced

Red pepper flakes

Sea salt and black pepper to taste

CILANTRO LIME RICE

3 cups cooked brown rice

1 cup fresh chopped cilantro

Juice of 3 limes

1 tbsp olive oil

  • In a large skillet over medium/high heat, cook red pepper flakes in olive oil for 1 minute
  • Add sweet potatoes and season with cumin, sea salt and black pepper and cook for 3 minutes
  • Add the beans, corn, kale and garlic, reduce to medium heat, and cover-cook for 8-10 more minutes or until kale is completely wilted
  • For the rice, ross rice with cilantro, lime and olive oil
  • Serve kale saute over rice and serve

  1. This looks like a fabulous easy and healthy meal! I sometimes go on junk food binges myself (usually about once a month), but my body always lets me know when enough is enough because I’ll start craving certain healthy foods again and then go on a kale binge or something. I’m glad to hear that you are taking care of yourself.
