Carrot Mango Lassi

Sweet baby Jesus, thank you, thank you, thank you for bringing lassis into my life.

I can’t get enough of them now that I’ve finally started making them at home. These super creamy, yogurt-based drinks first came into my life at the Walnut Grille about a year ago. Around the same time, I also started cooking for a client who bought mangos by the case and made one for me as well. They’re a traditional Indian drink, sometimes made with fresh mango, regular yogurt and tofu at most restaurants. Mine? Mine is a little different. And in my opinion, ten times better than anything I’ve ever had!

1 1/2 cups frozen mango

1 frozen banana

1/2 cup frozen pineapple

1/2 cup fresh carrot juice

1/2 cup water or almond milk

1/3 cup So Delicious vanilla yogurt

  • Put all ingredients into a high speed blender and blend until smooth and creamy!
