Raw Coconut Lemon Bites

April is already uber crazy. So I’m gonna keep this post short and sweet.

Because this is a short recipe and a super sweet, healthy dessert! Or snack. Or breakfast. Whatever floats your vegan boat 🙂

2 cups almond meal (this is the dry stuff you get leftover from making almond milk-you could make your own almond flour instead and just up the liquids in the rest of the recipe a bit)

1 tbsp maple syrup

Juice of 3 lemons

2 tsp pure vanilla extract

1/4 cup coconut oil

Shredded coconut for rolling (1 or more cups roughly)

  • Mix together everything except the shredded coconut
  • Form dough into balls (a little smaller than a golf ball) and then roll in shredded coconut until completely covered
  • Store in the fridge for up to a week

  3. I love lemon, but when I made the recipe as listed I found that it was TOO lemon. So I juiced one lemon and almond milk in place of the rest of the lemon juice. Also I added coconut to the dough and I found it much more appropriate to my palate.

  4. Hi, I would really love to make these, but I am not sure how much lemon juice you mean, as there are all different sizes!
    also, do you melt the coconut oil before mixing, as my coconut oil is hard as a rock.

    I have Raw Almond Flour, is this the same as Almond Meal? I also would like the know the amount of lemon juice this recipe calls for, being I do not have fresh lemons.
