Spicy Thai Chickpea Burgers

Holy spiciness!

I am so in love with these crazy simple chickpea burgers that I saw on Pinterest. I changed them up a bit, doubled the recipe and served them with some avocado cilantro cashew sauce and even more sriracha and was blown away by the flavor. They are bursting with yumminess and fresh veggies and I will be making these regularly from this point on!

4 cups cooked chickpeas

2 cups gluten-free oats

2 small zucchinis, shredded

1 small red onion, diced

1/2 red bell pepper, minced

1/2 cup fresh cilantro, minced

1/4 cup peanut butter

1/4 cup sriracha

1/4 cup olive oil

2 tbsp apple cider vinegar

1 tbsp cumin

1 tsp garlic powder

1 tsp sea salt

1 tsp black pepper

  • Preheat oven to 400 degrees
  • Pulse chickpeas in food processor a few times, until crumbled, but not pureed
  • Add all remaining ingredients together until well incorporated (it’s easier if you just mash together with your hands!)
  • Form into patties and place on a greased baking sheet
  • Bake for 30 minutes at 375 degrees, turning halfway through
