Coconut Pineapple Cilantro Smoothie

Well helllllooooo there summer! Nice to see you again 🙂

With my classes wrapping up (mostly) for the season and the boys I nanny ALMOST free from school, I can’t help but feel like a kid again myself. The summer brings so much more freedom for me to focus on the really fun parts of my cooking business. Don’t get me wrong, my classes and my students are the MOST fun, but it’s a lot of work and fairly stressful at times.

With the warm weather though comes a much more flexible schedule, more time for blogging, more time for recipe creating and a whole lot of time for tanning by the pool 🙂

This smoothie is one I’m currently obsessed with and have been enjoying in the sun the last couple of weeks. I’m a HUGE cilantro fan and put in virtually everything. I had yet to use it in breakfast form though, but after using it in a pineapple lime dressing the other day, I figured it would be just as fabulous in a pineapple smoothie-and I was right!

1 1/2 cups frozen pineapple

1 cup frozen mango

1 cup fresh or frozen chopped kale or spinach

1 cup loosely packed fresh cilantro

1/2 of one avocado

1 tbsp hemp seed

1 tsp coconut oil

2-3 cups water or coconut/almond milk

  • Blend all ingredients together in a high speed blender until smooth
