Pumpkin Pie Granola

I SWEAR, lots of amazing product reviews are in the works. Thanksgiving meal prep for all my clients has made for a crazy couple of weeks. I don’t even want to LOOK at stuffing or mashed potatoes for another year!

I hope you has a WONDERFUL turkey-free holiday 🙂 I am so grateful for all my readers, clients and students! And I’m saying thanks with this yummy pumpkin pie granola recipe I’ve been noshing on for weeks!

3 cups rolled oats

1 ½ cups chopped pecans

1/3 cup chopped walnuts

3 tbsp coconut sugar

2 tbsp hemp seed or ground flax

2 tbsp ground or crushed Sacha Inchi (optional)

½ tsp cinnamon

¼ tsp ground ginger

¼ tsp ground nutmeg

¼ tsp ground cloves

¼ cup coconut oil

¼ cup maple syrup

½ cup pumpkin puree

  • Preheat oven to 350 degrees
  • Mix together oats, nuts, coconut sugar, Sacha Inchi, hemp seeds and spices
  • Over medium heat, warm together coconut oil, maple syrup and pumpkin puree in saucepan
  • Pour over dry mix, transfer to a baking sheet and bake at 350 degrees for 20-25 minutes
