What I Ate This Week

So I mentioned before that I would likely be doing a weekly round-up of the things I’d been eating and the vegan places I’d been finding along my travels. We’ve been venturing out of Boulder almost every weekend, and so the task of finding vegan options in various cities and towns has been quite the challenge. We’ve found some pretty great spots and hidden gems thus far, but PLEASE let me know if there’s other spots I’m missing, in and around, the Boulder area 🙂

Trailhead Taphouse

Golden is one of the CUTEST towns we’ve been to recently. It’s very mountain-esque and has an old-school, mining vibe with lots of saloon-style bars. There’s actually quite a bite to do there though, with some moderate hiking and some awesome breweries and a really great smoothie spot. Plant-based dinner options seem to be sparse, though. I read online that Trailhead Taphouse has some lentil meatball or other meat substitutions for most of their dishes, so that’s where we ended up. They no longer offer the lentil sub, but DO have tofu or mushrooms in place of any meat dish they have on their menu. I’m not a fan of mushrooms and don’t eat a lot of soy unless I cook it at home, so I instead went with their veggie jambalaya, that was filled with beans, rice, squashes, tomatoes and cornbread. It was SUPER filling and had superb flavor, and was ideal since the weather was quite cold that day. They also have AWESOME beer and sweet lighting fixtures (I’m a sucker for vintage lighting), which made this place even better.

Watercourse Foods

My favorite! This has been my first time here, since I moved to Boulder and I was sooooo excited to revisit. I tried REALLY hard to get something different…but failed. Their Atlas burger with fried green tomatoes, tofu bacon and avocado smash is just TOO good, not to get every time. Same goes for their buffalo cauliflower wings, that we obviously got, as always. I did get their kale Caesar salad for the first time, which was simple, but insanely good for some reason. Probably because I’ve been lacking in the greens department for the past few weeks. Steve did change things up a bit and got their Ocktoberfest sandwich special, which was a seitan pastrami with sauerkraut, smushed between two pretzels. PRETZELS! It was incredibly delicious and I ended up eating a large portion of it. Watercourse, you never cease to amaze me!

Garfinkel’s

Though Vail was honestly one of the MOST gorgeous places I have ever been, it was farrrrr from vegan-friendly. We stocked up on plenty of leftovers from Piante, of course, but needed a breakfast/brunch option. I was overly amped up to try Green Elephant Juicery, but was sad to see that it was currently closed until ski season kicks in. The only place Steve could find was Garfinkel’s, which turned out to be a stellar option. They’ve got some soups and salads you can adjust to be vegan, along with veggie lettuce wraps. I went with their veggie burger, which actually turned out to be really good-super crispy, not mushy, and tons of flavor- and some of their sweet potato fries, which were top notch. They’ve got great beer, awesome outdoor seating, and amazing views of the mountains from their patio.

Twisted Pine Brewery

I’ve been trying to find a local bar to call home. One I love above all others, one with great beer, great food, great servers/bartenders and a solid assortment of both outdoor/indoor games. And Twisted Pine might be it. I love the space and staff here, and their cucumber Homeslice ale is currently one of my favorites in town. We’ve been going here fairly often, and I even brought Arikka and her family here the other day while they were visiting. Twisted has hummus, vegan pizza, lots of salads and pretzels, that we’ve now got on numerous occasions. Their dipping sauces aren’t all vegan, but they are on Happy Hour special, so they’re hard to resist.
