Lacuna Food & Juice

Not to be outdone by Boulder’s growing smoothie/juice scene, Denver’s newest vegan cafe/juice bar isn’t just a super tranquil urban oasis, but also a gorgeous yoga studio, too! Welcome to RiNo, Lacuna Juice Bar and Yoga.

(Your move, Boulder)

When I say I could happily live in Lacuna, I’m not kidding. It is plant HEAVEN. With a welcoming, cozy suspended bed, lots of adorable spots to post up and work for the day and calming natural light, it really feels like a dream. It kinda feels like you’re living in a Boho-inspired, cacti-centric Pinterest board when you’re here, which is a welcome contrast to the usual vibe in it’s boisterous, loud, artsy RiNo neighborhood.

And the only thing that makes this gorgeous spot even more lovely, is the food, of course. With some of the most vibrant and unique collection of juices I’ve ever seen, in addition to superfood based smoothies and fancy nut milk based drinks and lattes. I appreciate their focus on more veggies, hemp, chia, turmeric and other superfoods in their juices and smoothies, rather than just focus on the usual fruits.

I tried a bunch of items here, and the real highlight for me was the pitaya pearl rose latte, mostly because, HELLO-look at the color!

If there was ever a drink made for Instagram, this is it.

Not to mention, that it’s effing delicious and really soothing. I typically hate hot drinks (because Bostonions only drink things iced, all year, if you didn’t know), but this one was really incredible. I can imagine it will be even more appreciated come the fall, and it’s the perfect pre-or-post yoga treat.

And for someone who doesn’t love beets-in fact, I downright refused to drink beets after a horrific juice cleanse a few years ago-I found myself head over heels for their Ruby juice which is beets, naval orange, pear, fennel, turmeric and lemon. Their activated charcoal and honey Onyx variation, and their grapefruit, orange and rose water Citrine, are also wonderfully creative and delicious.

Though their menu is also full of hearty sprouted and raw vegan salads, including a yummy smokey tofu one, AND nutrient-dense wraps, soups, snacks and puddings, I couldn’t get my mind off their toasts. And co-owner Megan Whiteside will proudly proclaim that this will be the best avocado toast you’ll ever have.

She’s not wrong.

Though a bit smaller portion-wise than I would have liked, (because, let’s be real, I need A LOT of toast most days), the flavor was so on point. Creamy avocado, incredible coconut-based feta and an addictive seed blend topped with sprouts, made it not only the fanciest toast I’ve ever had, but certainly one of the most palette-pleasing.

So if you’re in the mood for nourishing food, fulfilling yoga or a peaceful place to work from for the day, you definitely need to visit Lacuna!
