Maple Flax Pumpkin Chocolate Chip Muffins

Though I will NEVER drink a pumpkin spice latte or any type of basic bitch Starbucks beverage in the fall, I do enjoy recipes that have REAL pumpkin in them.

These muffins are crazy easy to make, and I whipped them up just using extra ingredients I had laying around. Feel free to sub raisins, walnuts or pecans in instead of chocolate chips!

1 cup oat milk or any non-dairy milk

3/4 cup pumpkin puree

1/4 cup melted vegan butter or coconut oil

1/3 cup maple syrup

2/3 cup coconut sugar or regular sugar

2 tbsp ground flaxseed

2 tsp pure vanilla extract

1 1/2 tsp baking powder

1 tsp baking soda

2 tsp pumpkin spice (OR 1 1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/8 tsp nutmeg, 1/8 tsp allspice)

2 cups all-purpose flour

1 cup vegan chocolate chips

  • Preheat oven to 350 degrees
  • Whisk together oat milk, pumpkin, butter, maple syrup, butter, sugar, flaxseed, vanilla, baking powder, baking soda and pumpkin spice until smooth
  • Stir in flour 1/2 cup at a time, until a sticky dough has formed
  • Add chocolate chips and mix in until well incorporated
  • Pour into 12 greased muffin tins and bake at 350 degrees for 25 minutes
