Raw Zucchini & Radish Dill Salad

2 zucchini, julienned

4 radishes, sliced thin (on a mandolin and in half is best)

2 cups baby spinach

1/3 cup fresh parsley, minced

1/3 cup fresh dill, minced

¼ cup green onions, chopped

2 tbsp lemon juice

1 tbsp olive oil

1 tsp sea salt

½ tsp black pepper

  • Toss zucchini, radishes, spinach, parsley, dill and green onions together in a bowl
  • Whisk together lemon juice, olive oil, salt and pepper together, then drizzle over zucchini mix
