Pure Lemonade (2 ingredients!)

I never had a lemonade stand as a kid. I think I tried selling Kool-Aid and Gatorade from time to time, and the occasional batch of brownies, but never lemonade. I’ve never been a big fan of it and never really understand why it was a default sell for entrepreneurial children.

That was until Jim made this SUPER easy, ridiculously fresh and pure lemonade the other day.

He was at a quantum physics class over the weekend (yes, I date a smarty pants), and considering I know zilch on the subject, my questions automatically went to food.

“What did you eat? Did you have lunch? Were there vegan snacks?”

I always ask the really important questions.

To my surprise, the class was held at the home of a woman I was considering cooking for, who has a broad knowledge of health and raw food. And yes, there was yummy food…and this insanely delicious lemonade.

When he told me she literally blended whole lemons to make a pitcher, I didn’t believe him. What about the seeds! The peel! You can’t eat either of those! He had to put his money where his mouth was and make it for me so I could see for myself. And I was stunned at how incredibly refreshing and yummy it was. I especially love that you essentially don’t waste the entire lemon, and instead of just juice or squeezing it, you get to use the whole thing.

Now that I’m hooked on lemonade, I just might open a stand. Maybe.

These are the measurements we use, but essentially you would use one cup of water per lemon.

4 lemons, sliced

4 cups water

1 tbsp raw organic sugar (optional)

  • Blend all ingredients together for one minute
  • Strain juice through a fine mesh strainer
  • You can drink the juice as is, OR add more water and leftover pulp in the blender, blend, and strain again for more juice!

  3. I like mine bitter, but my boyfriend added some raw sugar for sweetness. Oranges are also a nice addition as well 🙂
