Not a great photo, but a new recipe from my desserts class! Attend my next one at Boston Center for Adult Education on May 9th and try this incredible, gooey, rich pie for yourself!
CRUST
1 1/2 cups pecans
1 1/2 cup raisins
1 tbsp cacao powder
FILLING
3 avocados
1/3 cup raw cacao powder
1/2 cup melted coconut oil
1/2 cup soaked cashews
1/4 cup chopped dates, soaked for 15 minutes in warm water
2 tsp pure vanilla
Almond milk to thin out if necessary
- For the crust, pulse all ingredients together in a food processor until a sticky meal is formed
- Press into a pie tin or 8X8 baking pan
- For the filling, blend all ingredients together in a blender until smooth and creamy
- Pour filling over crust and let set in the freezer for 1 hour
