Mac and cheese might be one of my all-time favorite foods.
And nothing, I mean NOTHING, beans a homemade version. Even if you’re not vegan, I’m sure you can attest to this. Made-from-scratch recipes always beat
But let’s face it-we don’t always have time to do that though. And if you can whip up a comforting meal in less than 15 minutes on a busy night, you’ll probably be inclined to do so. And while I pride myself on making everything home and from scratch, I too, am human, get tired, get overwhelmed, and look for an easier option. Which isn’t always easy, especially when you’re vegan.
But the vegan mac and cheese from Annie’s Homegrown is a great, quick, easy option for a fast meal that isn’t full of artificial crap. With all organic and plant-based ingredients, it;s one of the few vegan meal options I’ve seen without a long long of sketchy additives. But Annie’s is mostly just full of sweet potato and pumpkin, which gives it a gorgeous color and an on-point, creamy texture. It didn’t have a weird, bitter, filmy taste that I find a lot of vegan cheese replacement products have.
Then there’s the actual flavor. When I make my own mac and cheese, I add alot of onion, garlic, lots of spices. This one? A little on the blander side, and almost too sweet for me. It had an earthy undertone, that kind of threw me off. It was honestly great, just not at ALL what I’m used to. I added some salt, pepper, garlic powder and onion powder and that helped make it more my style. Next time around, I think adding roasted broccoli, peas or some greens to it, to make it a bit more savory.
All in all, a GREAT product and a fabulous option on a busy night!
