I know- here we go again, recycling the same ingredients for different recipes. I had lots of friend chickpeas and spinach leftover from previous meals in the week and was just not in the mood to cook something difficult and groundbreaking. I’ve been getting super stressed trying to come up with something creative every time I’m in the kitchen so this easy orzo dish was a relief for me.
1 package orzo, cooked
3 cups fresh, loose spinach
1 cup green onions chopped
1 cup fried chickpeas, reheated
1 cayenne pepper, minced
1 tbsp olive oil for frying
- In a frying pan over medium/high heat, recook chickpeas in olive oil and cayenne pepper for about 5-7 minutes or until they’re beginning to crisp
- Meanwhile, in a large bowl combine orzo, spinach, green onions, salt and pepper
- Add chickpeas when done, and stir well so that the spinach begins to wilt
