Peach Frozen Yogurt

2 cups peaches, chopped

3/4 cup plain yogurt (or plain coconut or soy milk yogurt for vegan)

1/2 cup coconut milk

1/4 cup honey

1/4 cup brown sugar

1 1/2 tsp pure vanilla

1 tsp brandy or rum (optional)

    

  • In a medium saucepan over medium heat, heat 1 cup of peaches, the coconut milk and the sugar for about 5 minutes or until sugar is fully melted and milk begins to thicken
  • Remove from heat, and pour mixture into food processor with remaining peaches, yogurt, honey, vanilla and brandy/rum
  • Blend mixture until creamy
  • Churn in ice cream maker or let solidify in freezer for 3 hours before serving
