Sweet Potato & Beet Chips

I love new kitchen gadgets!

Slicing by hand can make life extremely difficult, especially when it comes to raw food and meals, so I’d been wanting a mandoline for quite some time now.  We finally found a great, decently priced one on Amazon and I love, love LOVE it!  Yes, Jim and I have been sustained injuries because we were quick to start using it before we knew how to operate it properly, but a few band aids later, we had some yummy dehydrated veggie chips. And can I just say, how gorgeous beets are?  The color and natural design of their interior is seriously beautiful!

2 sweet potatoes, sliced thin

2 large beets, sliced thin

1/4 cup extra virgin olive oil

1 tsp sea salt

1/4 tsp black pepper

1 cayenne pepper, minced

  • In a bowl, toss veggie slices with oil, salt, pepper and cayenne, until evenly distributed
  • Place on trays and dehydrate between 108 and 115 degrees for 12 hours

  2. I just got a dehydrator and plan on getting a mandoline soon. These look great and I love the colors. I can’t wait to try them out!
    P.S. that’s one of the mandolines on my short-list, and I have a Nesco dehydrator, too 🙂
