Gingersnap Molasses Cookies

1 1/2 cups unbleached white flour

1 1/2 cups whole wheat flour

1 cup brown sugar

1/2 cup butter, softened

1 egg

4 tbsp molasses

2 tbsp honey

1 tsp grated ginger

1 tsp cinnamon

1/2 tsp sea salt

1/2 tsp nutmeg

  • Preheat the oven to 350 degrees
  • Mix together all ingredients except the flour
  • When everything is mixed, slowly stir in the flours 1/2 cup at a time until thoroughly mixed
  • Roll dough into balls and SLIGHTLY press them down onto a baking sheet
  • Bake at 350 degrees for 7-8 minutes
