3 cups cooked chickpeas
2 cups chickpea flour
1 1/2 cups shredded carrots
1/2 cup yellow onion, chopped
1/3 cup chopped cilantro
1/4 cup olive oil, plus 2 tbsp
2 cloves garlic
1 tbsp lemon juice
1 tsp sea salt
1/4 tsp ground coriander
1/4 tsp black pepper
Garnish with 4 cups fresh spinach
- Preheat oven to 400 degrees
- In a frying pan over medium heat, cook onion in 2 tbsp oil for 8 minutes or until translucent
- Add garlic and cook for an additional minute
- Meanwhile, in a food processor combine chickpeas, flour, carrots, 1/4 cup olive oil, lemon juice, salt, pepper and coriander, and pulse until creamy
- Remove from processor and stir in cilantro and onions
- Form mixture into burger sized patties (dust with more chickpea flour if too moist)
- Place on a baking sheet and cook at 400 degrees, 10 minutes on each side
