Hot Carob

During the day, I usually don’t like to have anything to drink other then water.  Nights are generally for wine-drinking, but as the weather gets colder, I’ve been finding myself in the mood for hot chocolate.  Considering the processed packet versions are full of sugar, additives and high fructose corn syrup and the good quality organic variation from Whole Foods costs more than I’d care to pay, Jim thought up the idea of making hot chocolate out of coconut milk and carob powder.  Carob originates from an antioxidant bean, thus making it a much healthier alternative to chocolate, and the finished product of this drink tastes exactly like any sweet hot chocolate. Cheers!

*This makes two servings

2 cups coconut milk

2 tbsp carob powder

2 tbsp honey

2 tbsp pure vanilla

  • In a small saucepan over medium heat, whisk together coconut milk and carob powder for 5 minutes-whisk continuously so lumps don’t form
  • Add in honey and vanilla and whisk for an additional minute before serving
