Looks like our Kale & Avacado Salad‘s cousin, right? It’s very similar in appearance, but the taste is very different. The raisins give it a great sweetness and the endive isn’t quite as bitter as the kale. This is one of John’s favorite dishes, and I love making it because it’s really easy to make, but packed with nutrition!
1 bunch curly endive (aka chicory)
1 large head broccoli, steamed (2-3 cups into florets)
2 avocados
1 cup shredded carrots
2/3 cup raisins
1/2 cup walnuts, chopped
1/2 cup red onions, sliced
3 tbsp lemon juice
1 tbsp olive oil
1/2 tsp sea salt
1/4 tsp black pepper
- Toss together endive, broccoli, carrots, onions and walnuts
- In a blender, combine avocados, lemon juice, oil, salt and pepper and blend until smooth and creamy
- Stir sauce into the endive mix and serve
