Kale, Pear & Pecan Buckwheat Salad

1 bunch lacinato kale, sliced

2 D’Anjou pears, sliced thin (or 2 small Granny Smith apples sliced, if you want more crunch)

1 1/2 cups buckwheat groats (soaked or cooked)

3/4 cup raw pecans, chopped

2/3 cup dried cranberries

1/2 cup red onion, chopped

4 tbsp olive oil

3 tbsp fresh lime juice

1 tbsp red wine vinegar

1 tsp sea salt

1/4 tsp black pepper

  • Whisk together oil, lime juice, red wine vinegar, salt and black pepper
  • Toss all other ingredients together and then stir the oil mix into kale mix
