Another meal intended for John, but one that I ended up lovin instead! These are ridiculously easy for a great raw meal and are completely filling, which isn’t always the case for an uncooked meal.
2 zucchini, slice lengthwise and thin (mandolin is the way to go with these)
1/2 cup raw cashews
1/2 cup raw almonds
1 cup chopped carrot
1/2 cup chopped green onions
1/2 cup sun-dried tomatoes
1/4 cup chopped chives
1/4 cup chopped fresh cilantro
2 cloves garlic, minced
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp nutritional yeast
1 tsp sea salt
1/2 tsp black pepper
1/4 tsp cayenne powder
- In a food processor, pulse all ingredients except zucchini until thick and creamy
- Lay out zucchini strips and smear 1 heaping tablespoon of mixture onto strip, spreading it out to cover about half of the zucchini
- Roll up strip up, to be about 2 inches long
- Place on dehydrator sheets and dehydrate at 105 degrees, 7-8 hours until firm
