I have no problem admitting that I get TONS of inspiration from all the other fabulous plant-based bloggers out there who have been vegan for longer than I;ve been alive. There’s so many great vegan resources available now and I stalk Facebook, Twitter, Instagram and of course, Pinterest for recipe ideas probably as much as all of you! Oh, and pleaseeee feel free to stalk me on all of them as well 😉
One of my absolute faves (and if you’re plant-based she’s probably one of yours, too) is Isa Chandra. I consider her one of the great vegan pioneers and Veganomicon and Post Punk Kitchen are two of my culinary bibles. So when I have eggplant on hand and NOT A FREAKING CLUE as to what to do with it, I turn to Isa for inspiration.
This is one of the few recipes I’ve made and made absolutely no alterations to it. And it was incredibly perfect and a recipe I never would have come up with on my own! So thanks Isa (and all you other veg bloggers) for being so amazing 🙂
