Apple Fig Oatmeal Bites

I keep making these and eating them all. Then making another batch, telling myself that I’ll remember to photograph them. And then I eat them all.

And this vicious, delicious cycle goes on and on.

SO, since I am too busy eating these all the time to snap a pic, I love the recipe too much not to share immediately. Thus, you’ll have to make them for yourself and just see. MAYBE you can get a glimpse of them to the left side of this picture at one of my demos recently, too.

1 cup rolled oats

5 dried figs, chopped

1/4 cup raw almonds

1/4 cup raw cashews

1/4 cup raisins

Dash of cinnamon, nutmeg, ginger and cloves

10 medjool dates, pitted

2 small apples, peeled and chopped

1 tbsp chia seeds

1/2 tsp cinnamon

1/2 tsp pure vanilla

  • In a food processor, pulse figs, almonds, cashews, raisins, cinnamon,, ginger,, cloves and nutmeg until a sticky meal is formed
  • Add in oats and pulse until well combined
  • Remove from processor and pour into mixing bowl
  • Pulse dates, half the apples, cinnamon and vanilla in the processor until smooth
  • Stir date mix and remaining apples into oat/fig mixture and stir until well incorporated
  • Roll into golf ball sized bites and let sit in the fridge 15 minutes before serving
