Raw Chocolate Dipped Coconut Oranges

Oh em gee.

These are unreal.

What does one make when they’ve got a housewarming party to go to, but ZERO time to cook anything? From now on, I’ll be making these little beauties.

I’m back to teaching quite a bit, and have lots of private sessions planned. Add nannying, the Superbowl, my regular cooking clients and some big blog projects to the mix, and I’m lucky to be remembering to feed myself at this point. Which is probably why I ate virtually one out of every five of the oranges I made while I was assembling them-a four hour cooking class last night left me no time to eat dinner and I was beyond stahving when I made these this morning.

They are super cute, easy to make and a quick, healthy snack or treat for any occasion!

5-6 clementines or small, seedless oranges, peeled

1/2 cup coconut oil, melted

3 tbsp pure maple syrup

6 tbsp raw cacao powder

Shredded coconut OR sea salt for dusting

*You could also make this recipe easier, but just melting vegan chocolate chips instead of the raw version

  • Line a baking sheet with parchment paper
  • In a blender or food processor, blend together coconut oil, cacao and maple syrup OR melt your chocolate chips
  • Dip half of each slice into the chocolate mix and lay on baking sheet
  • Dust with coconut or sea salt and let set in the freezer for at least 15 minutes
  • Store in freezer until ready to serve!
