I just had to, had to, had to give some love to my new favorite place to eat in Colorado!
The Vegetable Express is SUCH a welcome addition to the vegan food truck scene, especially because Boulder specifically is fairly lacking in any plant-based options. So I am so stoked that this truck has been making frequent stops to The Rayback Collective, since I am there all the time.
They hit all my favorite notes when it comes to exceptional vegan eats, like a Philly seitan sub, kale Caesar and of course, buffalo seitan wings. AND! The Impossible Burger! Which has actually been impossible to find otherwise, here in Boulder. When I’ve found it in Denver or back in Boston it’s cost me upwards of $25, which I think is worth it, but The Vegetable Express has a large version of it with local vegan cheese and a side of fries for only $16! Such a solid deal. I was also overly impressed with their Philly sub because it’s got such great texture and a good mixture of veggies, seitan and Peaceful Rebel cheese.
And their wings! I am determined to try every single vegan buffalo wing in Colorado, and I think I’m on a solid track thus far. But even my non-vegan friend agreed that The Vegetable Express wings are even better than actual chicken wings. They’ve got an extra crispy, fried exterior and their sauce is so so so so delicious!
