Being vegan and eating plant-based while camping or backpacking is not always easy.
I used to eat mostly chips, vegan jerky, PB and J sandwiches, instant oatmeal and dozens of protein bars while hiking or camping. It’s not always the most exciting, the most delicious and it certainly is not the healthiest.
So when I went on my first backpacking trip recently, I knew I needed something better. I needed to up my game for the mileage I was about to put in, and didn’t want to set up camp, only to eat something lackluster like oatmeal or granola. Hands down, my favorite blend! I mean, you add pasta or pesto to almost anything, and it’s delicious, right? This simple blend of tri-color quinoa, organic wheat pasta, sun driied tomatoes, basil, parsley, chickpeas and spices was bursting with bold flavors. I gobbled it up almost immediately after the first half of my backpacking trip and was totally satisfied.
I feel bad that it was almost dark when we ate our camp dinner and it made for a less than stellar photo. This Harissa red pepper was loaded with protein due to it’s quinoa, chickpeas, hemp AND lentils. I loved having all the different textures in every bite, but what made it extra yummy was the mix of super-healthy Moroccan spices.
GARDEN MEDLEY
This savory mix of quinoa and veggies was the favorite among my camping buddies, who aren’t as into spicy, bold foods as I am. Peas, carrots, spinach, tomato, broccoli, onion, garlic and turmeric, make this a truly healthy, well-rounded dish, that’s super plant-dense. It’s mild spice-factor will likely make it a crowd-pleaser for both kids and adults who try it out!
JAMAICAN JERK
I consumed this one when I returned from camping and thought it might be interesting to pair it up with some tofu burgers and make a non-camp meal out of it. It was just as easy and just as tasty! This cup was a mix of quinoa, hemp, sweet potatoes and bean, which were actually really good in their dehydrated to rehydrated form! Pairing it with the tofu made for an extra filling meal. Next time around, I’d probably add this one to a soup or throw in some extra potatoes and greens.
By far, the most unique of the bunch, I really enjoyed this sushi quinoa variation. I also consumed this one at home, because I had some seaweed salad mix that I’d been dying to try. I was a super delicious combo and looked extra fancy 🙂 The balance of ginger, seaweed, miso, carrots and soybeans, were a great, colorful mix that made for yet another, high-protein, taste bud-pleasing meal.
Sadly, some of my non-vegan blogger friends I backpacked with, didn’t get the memo that I needed to photograph these cups before consumption. Which is a shame, because this one is insanely good! We loved the spices in it, and especially enjoyed the addition of roasted corn, black beans and chipotle peppers. It was like a mini taco bowl in a cup!
