So my best friend Liz and I have done our fair share of camping this summer. Every trip has been epic and gorgeous. And our campfiire kitchen and food set up has been somewhat elaborate throughout every adventure. I’ve made BBQ seitan over the fire, Daiya mac and cheese over a hot plate and made loads of oatmeal and quinoa dishes.
But all of those have paled in comparison to Liz’s brilliant fireside dessert, that I veganized super easily.
These stuffed ice cream cones are extremely rich, decadent, sweet, salty and utterly perfect. I think they’re 10 times better than your regular s’mores and honestly, SO much easier to make.
Even if you’re not camping in the wilderness, trust me-you should make these in your own backyard whenever you’re craving something sweet!
Sugar ice cream cones
Peanut butter (about 1 tbsp for each layer)
Vegan chocolate chips (about another tbsp)
My Dandies marshmallows (another heaping tbsp)
- Start by placing chocolate chips at the bottom of the cone
- Layer with some peanut butter
- Top by stuffing marshmallows over the peanut butter
- Repeat layers at least one more time
- Wrap in foil
- Refrigerate until you’re about to use them OR immediately throw them on a grate over the fire and cook for at least 10 minutes, rotating halfway through-if the marshmallows aren’t melted, return to fire until they are!
