The Veggie Yeti Food Truck Review

Denver! You and your vegan food truck offerings continue to make me very, very, very happy.

And all the plant-based eats at The Veggie Yeti is no exception. The newest food truck on the block is dishing out awesome comfort foods, and being served by two totally kick ass dudes.

Ben Como and Jared Simpson have been working in the food industry in some capacity for years, and their dream of running a food truck, finally came to fruition a few months ago with The Veggie Yeti. I was lucky enough to hang with them, see some behind-the-scenes food truck action and, of course, sample some of their incredible food.

Though there isn’t a real focal point in terms of a food theme, EVERYTHING is super good. It’s a savory mix of things like buffalo cauliflower tacos, classic homemade burgers, loaded tots and a rotating mix of other classic “bar” foods. Como and Simpson are crazy passionate about the whole process, from making cheese sauce from scratch, engaging with patrons and keeping up a stellar social media presence. My biggest grievance with some foods truck is that you never know where they’re going to be, what they’re going to be serving and what their upcoming schedule is like. The Veggie Yeti is superb at connecting with fans, and I think it’s a huge reason they’re already so popular in the Denver area (check out their Instagram here for further proof).

And now for the actual food. Their buffalo cauliflower taco was some of the crispiest, most perfect buffalo cauliflower I’ve ever had. And let’s be honest-I have had A LOT of buffalo cauliflower in my life, so I’m allowed to judge! I love their homemade hot sauce it’s drenched in and how it paired with their crunchy slaw.

Their cheeseburger was reminiscent of an In-N-Out burger, which should be taken as a compliment. It’s composed of walnuts, mushrooms and some seitan, but holds up much better than other veggie burgers I’ve had made from scratch. And unlike my favorite Beyond Burger or Impossible Burger, it didn’t leave me feeling like crap. Which other customers also commented on while I was there. Because sometimes, vegan food can be downright greasy, fried and way too heavy and oily, and that just isn’t the case here.

Their tots are also out of this world! Who doesn’t love a good tot? Though I loved their cheese sauce, I definitely recommend getting their loaded variation so you get the added texture and flavor from their toppings.

And dessert! Yes, dessert! Which I usually don’t see sweet stuff on trucks. Their cookie dough ball isn’t super fancy, but it is a nice, sweet way to end such a savory meal.
