Quinoa Salad with Cucumber, Radish & Avocado
3 cups cooked quinoa 2 avocados, chopped 8 radishes, diced or sliced thin 1 cucumber, seeded and diced 1 cup fresh cilantro, chopped 1/2 cup chives, chopped 1/4 cup olive oil 3 tbsp lime juice 1 tsp sea salt 1/4 tsp black pepper Toss all ingredients together and serve! Easy peasy 🙂
