I hope you has a WONDERFUL turkey-free holiday 🙂 I am so grateful for all my readers, clients and students! And I’m saying thanks with this yummy pumpkin pie granola recipe I’ve been noshing on for weeks!
3 cups rolled oats
1 ½ cups chopped pecans
1/3 cup chopped walnuts
3 tbsp coconut sugar
2 tbsp hemp seed or ground flax
2 tbsp ground or crushed Sacha Inchi (optional)
½ tsp cinnamon
¼ tsp ground ginger
¼ tsp ground nutmeg
¼ tsp ground cloves
¼ cup coconut oil
¼ cup maple syrup
½ cup pumpkin puree
- Preheat oven to 350 degrees
- Mix together oats, nuts, coconut sugar, Sacha Inchi, hemp seeds and spices
- Over medium heat, warm together coconut oil, maple syrup and pumpkin puree in saucepan
- Pour over dry mix, transfer to a baking sheet and bake at 350 degrees for 20-25 minutes
