Another FANTASTIC meal from Great Vegan BBQ Without A Grill. After seeing all these incredible recipes, surely you’ve bought your copy by now…
BUFFALO QUINOA BURGERS
1 medium sweet potato
2 tsp avocado oil, divided
2 1/2 cups cooked quinoa
2 tbsp ground flaxseed
1/4 cup water
1/3 cup buffalo sauce
1 tsp garlic powder
1/2 tsp sea salt
1/4 tsp black pepper
1 cup breadcrumb
- Preheat oven to 400 degrees
- Pierce sweet potato 10 times and brush with 1 tsp avocado oil, and then bake on a baking sheet for 1 hour
- Let sweet potato cool before peeling off the skin, and then mashing in a mixing bowl
- Add quinoa and continue mashing
- Combine the flax and water in another bowl and let sit for 2 minutes
- Mix together buffalo sauce, flax mix, garlic powder, salt and black pepper into sweet potato mix until well incorporated
- Form mixture into patties (I got about 8 out of them)
- Heat a skillet oven medium/high heat with 1 tsp of avocado oil
- Add patties, cover, and then sear for 8 minutes on each side until browned
