Recently, when people ask me for recommendations on where to eat in Boulder/Denver, I don’t even mention actual sit down restaurants at this point. Because our vegan food truck scene here is BOOMING and they’re honestly the only places I want to eat. Especially now that we’re finally heading towards summer and all the local breweries and city parks will be filled with my favorite food trucks like Denver Vegan Van and The Vegetable Express.
And now, I’m so pleased to add Migration Taco to my growing list of Denver vegan food trucks I adore!
The taco master behind the truck is Tracy Rackauskas, who has been vegetarian for over 20 years, and vegan since 2016, along with the rest of her family, including husband, Ben Dinsmore, who helps whip up their delicious grub. Their love for tacos and their recognition of the lack in said tacos around the Denver area inspired them to start Migration Taco.
Migration’s slogan is “nontraditional vegan tacos for you, for the animals, for the people for the Earth”, and it’s bursting with amazing, creative tacos that remind me of one of my favorite vegan spots in the entire country, Tacotarian. They’ve got loaded options like fried avocado with refried beans, chipotle ranch and Follow Your Heart shreds and their housemade garbanzo bean chorizo variation with red cabbage and macadamia nut Cotija. There’s also got mile-high (pun intended) loaded nachos, along with carne asada or Al pastor tacos, all with unique and delicious toppings.
They also throw a slight curve ball with the addition of a dreamy, decadent mac and cheese, that I obviously couldn’t resist.
(Can I dub myself a vegan mac and cheese connoisseur yet?)
Their creamy variation is elevated only by the option to add any of their tasty toppings to, which I foolishly didn’t even think of before eating because I was so excited just to dive in. In hindsight, it would have been a smart move to add the incredible texture of their fried onions, garbanzo chorizo and probably some chipotle ranch. Don’t get me wrong, it’s unreal on it’s own, but piling it with other deliciousness would only make it more palette-pleasing! I also scarfed down the fried avocado I mentioned earlier, which was absolutely incredible and had much more flavor in the batter than any other fried avo I’ve had before.
The REAL star might be their Barbecue Party taco, though. It’s both my favorite, and the favorite of creator, Rackauskas. The barbecue seitan wing-based taco has fried onions, mustard glazed coleslaw and some mac and cheese on it, too. It’s got so many awesome flavor and texture combinations into one taco, and it really does taste like a party in your mouth. Though it’s super filling for almost an entire meal (which would be a bargain because it’s only $6), I could have easily ate another two of these that night.
Migration Taco is starting rotations at some killer breweries around Denver, most often, my personal favorite, Alernation Brewing. Alternation is known for ONLY having vegan food trucks on their premises, which makes me love them even more. Although I don’t mind making the drive to Denver for incredible food, I am SO hoping they find a way to frequent Boulder so I can enjoy their mouth-watering tacos as often as possible!
