Literally the BEST muffins we have ever had!
3 cups shredded apples (about 3 large apples)
2 cups shredded carrot
2 ¼ cups whole wheat flour
1 ¼ cups applesauce
1 cup brown sugar
½ cup honey
¼ cup olive oil
2 tbsp vegan “egg”
4 tsp cinnamon
½ tsp nutmeg
3 tsp baking powder
1 tsp sea salt
- Preheat oven to 375 degrees
- In a large bowl mix together carrots, apples and honey
- In a separate bowl combine flour, brown sugar, cinnamon, nutmeg, baking powder and salt
- Whisk together applesauce, oil and “egg”
- Graually stir dry ingredients into carrots and apples, 1 cup at a time
- When dry mix is absorbed mix in whisked applesauce mix
- Spoon into cupcake tins and bake at 375 degrees 25-30 minutes
