Peanut Butter Banana Oatmeal Casserole

I know.  You’re probably doing a double take and saying “didn’t you JUST post a recipe for baked oatmeal?”.  It’s true, we made the pumpkin oatmeal last week.  But that one was vegan.  And that one didn’t have steel cut oats.  Or peanut butter and banana.  But this one is JUST as delicious and has a totally different taste then the former one.  Sounds weird, but I’d never had steel cut oats before and I kind of like that it’s tougher to chew because I’m a stickler for grinding down food as small as possible because it aids with digestion and is good for anyone who’s looking to lose weight-that’s your fun fact of the day 🙂

3 cups steel cut oats

3/4 cup creamy peanut butter
2 ripe bananas, sliced
1 cup coconut milk
2 eggs
2 tbsp honey

1/2 cup brown sugar

1/3 cup wheat germ

1 tsp pure vanilla
1/2 tsp sea salt
2 tsp baking powder

  • Preheat oven to 375 degrees
  • Combine all ingredients in a bowl EXCEPT bananas and mix well
  • Pour into a greased 13 X 9 casserole dish or baking pan and bake at 375 degrees for 25 minutes
  • Remove from oven, top with sliced bananas and cook for an additional 10 minutes
