Dairy-Free Banana Blueberry Walnut Bread

3 over ripe bananas

1 ¼ cup fresh blueberries

½ cup almond milk

½ cup honey

2 cups whole wheat flour

2 tbsp lemon juice

1 tbsp vanilla extract

1 tsp baking powder

½ tsp baking soda

¼ tsp sea salt

½ cup walnuts

  • Mash bananas with almond milk, lemon juice, honey and vanilla
  • In a separate bowl mix together flour, baking powder, baking soda and salt
  • Pour in dry mixture ½ cup at a time, stirring into banana mixture until thoroughly blended
  • Once combined, add in blueberries and walnuts and mix well
  • Preheat oven to 350 degrees and bake in a greased 9 X 5 baking pan for 50 minutes
