Pasta Salad with Homemade Yogurt & Chive Dressing

   

1/2 lb brown rice pasta, cooked

1 red bell pepper, chopped

2 cups broccoli, chopped

1 cup peas

3/4 cup red onion, chopped

1/4 cup water

Yogurt Dressing

1/2 cup plain yogurt

1/4 cup extra virgin olive oil

1 tbsp Dijon mustard

1 tbsp lemon juice

2 tbsp fresh chives, chopped

1 tbsp basil, chopped

1 tsp sea salt

Dash pepper

  • In a frying pan, steam peas and broccoli in 1/4 cup water, over medium heat for 6 to 7 minutes or until tender
  • In another bowl whisk together yogurt, olive oil and Dijon mustard
  • Add remaining dressing ingredients and continue to whisk for a minute
  • Add broccoli, peas, red onion and bell pepper to pasta, and mix well
  • Pour dressing over pasta mix and stir together
