One food I’ve been absolutely craving is onion rings. But it’s one of those snacks that I can never figure out if it’s vegan or not. Eggs in it? Milk? Who knows, in most restaurants, so my instinct is to just steer clear. Unless of course, I make them myself.
A recipe from Oh She Glows popped up on Pinterest and Arikka and I both instantly repinned at the same time. It was love at first sight.
I changed it a little, since I like my onion rings with a kick to it, and I have to admit-I ate the whole batch for dinner tonight.
1 large yellow onion, sliced into 1/2 inch rounds
1 cup whole wheat breadcrumbs
2/3 cup whole wheat flour
1/2 cup vegetable broth
1/2 cup cornmeal
1/3 cup coconut milk
1/4 cup nutritional yeast
1 1/2 tbsp cornstarch
1 tsp dried basil
1 tsp dried marjoram
1 tsp garlic powder
1/2 tsp sea salt
1/4 tsp white pepper
1/4 tsp dry mustard
1/4 tsp cayenne pepper
1/2 tsp coconut oil
- Preheat oven to 425 degrees
- Stir together the vegetable broth, flour, coconut milk and cornstarch
- In another bowl, mix together ingredients EXCEPT onions and coconut oil
- Grease a baking sheet with coconut oil
- Dip onion slices one at a time, into flour and broth mix and then dredge through dry mix
- Layer each onion onto sheet and bake for 16 minutes, turning halfway through
